Salta is the most extreme wine-producing region in the world with its breathtaking high elevated vineyards, which are situated between 1000-3000 m above sea level. It is as well the most northerly situated region in Argentina. It is famous for its fresh and aromatic wines from Malbec and the signature Torrontés white grape variety. The Andes mountain range serves as both climate protection and irrigation, with melted snow flowing down on the alluvial soils. Because of that, the grapes grown here can achieve ideal ripeness and acidity without becoming too extracted or too alcoholic. Salta has sandy-loam soils composed of thick fragments of gravel and fine sands on the surface. There are extreme temperature fluctuations between the day and the night, as during the day they can reach 38 °C and can drop at night to 10 °C. All those conditions cause the vines to rest and recover during the night and continue synthesizing colour, varietal aromas and flavours. It all results in vibrant wines with mature tannins, as well as white and red varietals are standing out for their fruit characters and varietal authenticity. The region is divided into three main areas including Calchaqui Valley, Cafayate and Molinos which are gaining fast international attention and recognition. The most planted grapes are Malbec, Torrontés, Cabernet Sauvignon, Merlot, Tannat and Chardonnay.
