Champagne is the most famous sparkling wine in the world and as we all know, comes from the Champagne region of France, which lies about 150 kilometers to the east of Paris, spreading across 319 villages Crus in four main growing areas The Montagne de Reims, The Vallée de la Marne, The Côte des Blancs and The Côte des Bar. It is one of the coolest wine regions in the world and sometimes the grapes are not ripe enough for producing decent wine. There are seven grape varieties permitted in the Champagne regions to be planted, starting with the most important three Chardonnay, Pinot Noir, Pinot Meunier and the additional Pinot Gris, Pinot Blanc, Petite Meslier and Petite Arbanne. Each grape has its particular characteristics and advantages as Pinot Noir adds complexity, weight and darker, meaty notes, Pinot Meunier provides racy acidity and fruitiness and Chardonnay contributes for elegance and finesse of the Champagne blend, along with creamy roundness and stone-fruit aromas. In terms of styles of Champagne, the region has a lot to offer from the Non-vintage Champagne wines which are traditionally blended from grapes grown in different years, helping the Champagne houses to establish the consistent house style, Vintage Champagne is made only from the wines of a single excellent harvest of which Vintage Champagne offers the most powerful expression to rosés and Champagne with different sweetness levels. Champagnes labelled as Blanc de Blanc are made only with white grapes and Blanc de Noir made only with red grapes. There are specific lawful requirements that each Champagne must spend at least 12 months ageing on its lees in the bottle after the second fermentation plus 3 months after the sediment is removed, in total 15 months before release. For the Vintage wines, it must spend not less than 36 months before it comes to the market. In the Champagne region, there is a classification system which has appointed Seventeen villages with Grand Cru and 42 Premier Cru Status. The best and the most desired Champagnes are sourced from a single vintage and vineyard from Grand Cru Village.
