The Chablis is a small historical wine region and appellation located approximately 190 km south-west of Paris in France and takes its name from the local town found at the heart of the area. Chablis is part of the Yonne Valley, roughly midway between Paris and Dijon and the most northern part of Burgundy.

The region has unique soil combination of clay and chalk called 'Kimmeridgian', and it is extensively littered by fossils of oysters and clams, giving the wines a unique profile of aromas and flavours. The taste is often described as a wet stone or with gun-flint character as well the fruit flavour is less intense than elsewhere in Burgundy, as Chablis' northern location produces flavours of green apples, pineapples, pink grapefruit with intense minerality. Also, the wines have strong acidity, often requiring time in the bottle to find their balance with some producers using wood ageing and some not, each one has with its own reasons.

Chablis has four categories according to the Appellation d'Origine Protégée system which classifies them in Petit Chablis AOP, Chablis AOP, Chablis 'Premier Cru' AOP and Chablis 'Grand Cru' AOP. The wines named Chablis are made only from Chardonnay grapes and the area is made up of 20 or so small villages gathered around the centrally positioned village of Chablis, which is split in two by the Serein River.

The Grand Crus vineyards of Chablis are connected together forming three slopes located on the right bank, overlooking the Serein River, these are the seven famous Grand Cru vineyards Les Clos, Valmur, Les Bougros, Blanchot, Vaudesir, Les Preuses and Les Grenouilles.
There are as well vineyards with Premier Cru status located on a set of hillsides on the left and right side of the river, with quality almost, like the Grand Crus, with vineyards situated on the right bank, with their slope facing to the Southwest and the generic AOC Chablis appellation, with at the lowest end of the classification, the "Petit Chablis". Chablis wine is one of the greatest wines of France, famous for its light and mineral character all over the world.
