A red grape and the name of a wine, Lambrusco originates from Emilia-Romagna and in more accurate terms, Lambrusco is a name collectively used for a large group of grape varieties, currently, over 60. Traditionally, Lambrusco wines were usually bottle fermented but this is far less common nowadays and the grapes now go through their second fermentation in large steel tanks. This is called the Charmat (or tank) method – this method is also used for the production of Prosecco and, as such, has resulted in a lower quality Lambrusco than those fermented in bottles following the classic method.
